Not veggie but cutting meat. Chickpea salad with veggies. How do I hit protein for running without meat?

New to veggie meals, tried lentil pasta but it’s meh. Easy sauce ideas for flavor? Cooking’s not my thing yet.

Plant-based sounds tough! Tried beans, but they take ages. Are canned beans okay for protein?
